Chamomile Flowers (Matricaria recutia)
The miles of chamomile displayed at the harvest-time of this particularly well-loved herb are enough to take your breath away. Its contemplative countenance fills every cup of tea with the sunshine that raised it and the loving hands who plucked it. But chamomile’s no sap: an optimist, she nonetheless has a bit of a bitter bite (especially the longer she’s steeped). And like every good matriarch, matricaria presides over family affairs with flavors firm and funny both.
