Alfalfa Leaf (Medicago sativa)
Alfalfa is the equivalent of a nutritionist’s field of dreams. It is the birthplace of all things green, the storehouse of all things vitamin and mineral, and the cradle of herbal convenience: so much goodness in one plant! If you had to travel to a desert island with only one herb to use for a survival food, would it be alfalfa? We certainly hope so. Whether you prefer to think of alfalfa as the father of all foods or the mother of all foods, her tender parental nourishment for all children of the earth is evident.
